Cinnamon Rings (Pickles)

Step # 1

2 gal. large peeled cucumbers
2 c. pickling lime
8 ½ qts. Water

Scrape and seed cucumbers and cut until they are in "rings"; Mix together pickling lime and water. 

Place rings into water/lime mixture and let stand for 24 hours; Drain rings in cold water to rinse away lime; Soak rings for three hours in ice water and drain.

Step # 2

1 c. White vinegar
1 large bottle red food coloring (1 oz.)
1 Tbsp. alum
8 ½ qts. Water

Mix all together; Cover drained cucumbers with this mixture. Heat and simmer for 2 hours. Drain and rinse.

Step # 3

2 ½ c. water
8 sticks cinnamon
2 ½ c. white vinegar
1 (10 oz.) pkg cinnamon imperials (red hot candies)
5 lb. sugar

Mix altogether; Bring mixtire to a boil, Pour over rings. Keep container tightly closed and let stand overnight

Step # 4

Drain and reheat syrup for 3 days and each day pour syrup back over rings after heating each day. On the last day heat cucumber rings and syrup to boiling point.
Pack into jars and seal.
