Chicken Cacciatore

From the kitchen of Paul Hooper of "Hooper's Pasta Sauces"

1 Chicken, Cut Up Salt and Pepper, To Taste
2 Tablespoons Olive Oil 1 To 2 Jars Hooper's Pasta Sauce,
1 Medium Onion, Thinly Sliced, Separate Rings Basil-licious is great with this recipe
1/2 Cup White Wine  

In a deep skillet heat oil over medium heat. Salt and pepper both sides of chicken pieces and brown in skillet. Turn fairly often. Do not cook chicken completely. This takes about 10 to 15 minutes.

Remove chicken to platter. Pour off excess oil.

Add sliced onions to hot skillet. Sauté until translucent and no longer firm. Add wine and simmer for about a minute.

Return chicken to pan. Pour Hooper's Pasta Sauce over chicken. Cover with lid slightly askew. Lower heat and let simmer until chicken is completely done…about 45 minutes. Serve with your favorite pasta.
