Fried Rice

3 Or 4 Cups Rice, Cold 3 Or 4 Green Onions, Sliced Thinly
2 Tablespoons Sesame Oil 1 Cup Frozen Peas And Carrots
Soy Sauce, To Taste 1/2 Cup Chicken, Pork Or Beef,
2 Eggs, Beaten -Cubed, Optional

Put a small amount of oil in pan and pour in eggs. Let it cook like you would an omlet (without scrambling) and when they're done roll up the egg and slice in thin strips. Set aside.

Pour enough sesame oil in pan to cover the bottom. Get it hot and start pouring rice in a little at a time, stirring after each time you add until all the rice is in the pan. Add soy sauce until it's the "right color". Add onions and cooked meat and stir. Stir in sliced egg. Stir in frozen peas and carrots. Lower heat and cover for about 10 minutes. Serve hot.
